Shetland Lambs as a pure breed have a small carcass size and produce about 30 pounds of very high quality meat that is very lean, exquisitely flavorful with a fine texture. Typical cuts consist of 2 leg roasts, loin chops, shoulder steaks, chopped lamb and stew meat.
Texel lambs as a pure breed have a meaty carcass and can produce up to 50 lbs of meat at weaning! Like the Shetland the meat is very lean and flavorful. The #1 pick for flavor!! Exquisite! Typical cuts are as above in Shetlands.

All of our meat is processed at Springfield Meat Co, Pa. They are a very clean, USDA inspected facility. Springfield Meat Co. is a very humane and reputable processing plant.
Reservations for freezer lamb needs to be made between September 1st and September 15th as lambs are processed late September/beginning of October. First come, first served, while supplies last*.
